FOOD CAN BE PREPARED
1.Idly, Dosai, Kuzhi Paniyaram

Step 1: Take the following and soak it separately for 2 hours, then grind it to paste 5 cups of millet. 1 cup of urad dal + ¼ spoon fenugreek seed

Step 2: Add salt to the batter and allow it 6 hours for fermentation.The idly, dosai batter is ready.

To make Ghee Roast Dosai

same batter making procedure as described above, but with ½ cup of urad dal only (instead of 1 cup). Add few tablespoons of ghee when making the dosai roast.If you want Kuzhi Paniyaram, then grind the batter for another 5 minutes to make it more smooth.

To Make Ghee Roast Dosai

To Make Sweet Kuzhi Paniyaram

prepare jaggery syrup, fried cashews and mix with the smooth batter.

To Make Chili Kuzhi Paniyaram

Fry chopped onions, green-chili, cumin seeds, cashews and mix with the smooth batter.

2.Congee/Porridge

Step 1: Take the following in a pressure cooker and heat in slow flame for 5 whistles. 1 cup of millet + ¼ spoon fenugreek powder + 5 cups of water.

Step 2: Add coconut milk and salt. Millet congee is ready.

3.Payasam/Kheer

Step 1:Take the following in a pressure cooker and heat in slow flame for 5 whistles.1 cup of millet + ¼ cup fried moss dal + 5 cups of water.

Step 2: Add ghee, fried cashew nut, jaggery, coconut milk, cardamom. Payasam/Kheer is ready.

To Make Sweet Pongal

same procedure as described above, but with 4cups of water only (instead of 5 cups). Heat in slow flame for 3 whistles only.

4.Ven pongal

Step 1: Take the following in a pan and fry it well in oil & ghee Mustard + Cumin Seeds + Ginger + Pepper + Green chili + Curry leaves + Cashews

Step 2: Take the following in a pressure cooker and heat in slow flame for 3 whistles. Above fried + 1 cup of millet + 4cups of water + Salt as required. Millet Pongal is ready, serve with sambar and chutney.

5.Biryani

Step 1: Take the following in a pan and fry it well in ghee Cinnamon + Lavanga + Cardamom + Chopped onions + Green chili + Cashews + Ginger garlic paste + Turmeric power + Carrot + Beans + Tomato + Curry leaves + Pudina + Coriander leaves + Salt as required.

Step 2: Take the following in a pressure cooker and heat in slow flame for 3 whistles. Above fried + 1 cup of millet + 3 cups of water. Millet Biryani is ready for serving hot.

6.Upma/ kichadi

Step 1: Take the following in a pan and fry it well in oil & ghee Bengal gram + Mustard + Ginger + Green chili + Chopped onions + Carrot + Beans+ Salt as required

Step 2: Take the following in a pressure cooker and heat in slow flame for 3 whistles. Above fried + 1 cup of millet + 31/2 cups of water. Millet upma is ready, serve with chutney.

7.Millet Meals

Step 1: Take the following in a pressure cooker and heat in slow flame for 3 whistles. 1 cup of millet + 31/2 cups of water.Millet Meals is ready. Serve with sambar, rasam, curd and vegetable curry.

8.Variety millet rice

Step 1: Take the following in a pan and fry it well in oil. Mustard + Urad dal + Bengal gram dal + Ginger + Green chili + Asafoetida + Coriander leaves + Curry leaves + Salt as required.

To make Lemon rice

add lemon juice extract and turmeric powder to step 1 when frying, then mix with cooked millet rice.

To make Tomato rice

add tomato to step 1 when frying, then mix with cooked millet rice.

To make Coconut rice

add coconut to step 1 when frying, then mix with cooked millet rice.

To make Curd rice

add red chilli to step 1 when frying, then mix with cooked millet rice along with milk, curd, fruits/raisins.
